Capsicum Salsa #goodfood.

This ever so easy salsa – you can make it drunk (!) – can be tossed with grilled fish, squid, prawns or chicken.
Great for a mid week meal as a joosh up , adulterated from Good Food

You need:
2 red capsicums blackened over the fire or burnt in the oven peeled then diced
½ red onion, finely diced
1 clove fresh garlic, finely grated
1 bunch parsley, roughly chopped
1 long red chilli, finely chopped
1 lemon, juice and zest
100ml olive oil
salt and pepper

• Pour a wine or three.
• Chop all ingredients except capsicums.
• Using the naked flame of the stove burner (if you have an electric stove use your barbecue), place the capsicums directly onto the naked flame.
• Or toss in an oven on high and watch them blister and burn a bit.
• Place into a bowl and cover with cling film.
• Let them sit for 20 minutes, then peel and dice.
• Take a mixing bowl and add to th ered onion, garlic, parsley, chilli, lemon juice, lemon zest and olive oil.
• Mix well and season.
• Easy !
