Indian Style potato salad #delicious.

This potato salad is yellow. And yellow is big news for summer.
This is more the dark Miu Miu mustard than bright Missoni yellow as the colour comes from Turmeric.
Serve this with simple fillet of salmon and a mango salsa and you will be so happy.
From my old recipe book !

You need for 4 or 8 on a diet

750g of waxy potatoes…. Kipfler are perfect but any old daggy potato is fine.
1/3 cup of extra virgin designer olive oil
¼ cup lime juice….may need more
2 teasp mustard seeds…dry fried for 2 secs
2 teasp ground tumeric….
1 small green capsicum
a Bunch of coriander or mint /rocket.
6 spring onions

• Put some water on the boil for the potatoes with some salt
• Pull out your knife and start slicing:
• Slice up potatoes into chic long 1 cm slices
• Throw in the potatoes and cook for about 4 minutes.
• They should be just undercooked and just tender…you don’t want mashed potatoes.
• Pour a wine and attack the capsicum.
• Cut up the capsicum into small chic pieces
• Cut up the spring onion into thin slices on the diagonal
• Dry fry the mustard seeds for 2 secs
• Squeeze the limes
• Now grab a bowl and throw in the lime juice, the olive oil, the mustard seeds, turmeric (watch the white Prada dress doesn’t get a splash of it or you will have a Miu Miu graphic print) , a teasp of salt and lots of black pepper and stir it.
• Pour the half the dressing over the hot potatoes.
• Stir it gently and really get the dressing all over the potatoes
• Watch as they go a gorgeous yellow.
• Let them cool and have a rest while you do the same.
• Before serving reapply lipstick, a spray of Chanel 19 then add the capsicums, spring onion, coriander and the rest of the dressing and voila!
• Needs lots of salt and pepper and more oil if it’s too dry ( but then don’t we all ?)
