It’s an oh so healthy warm salad that’s so easy to whip up and delicious as a side dish …

You’ll need for 4 fashionista, 2 teenage boys and 35 models
350 gm cauliflower (about ½), cut into small florets
1 to 2 garlic clove, finely chopped
Finely grated rind and juice of 2 lemons, or to taste or add preserved lemon.
100 ml extra-virgin olive oil
400 gm canned chickpeas, drained, rinsed
200 gm quinoa
1½ cups each coarsely torn flat-leaf parsley and mint
3 spring onions, thinly sliced
1 tabs sherry vinegar
100 gm Greek feta or labne, coarsely crumbled
Method

• Slip into Givenchy  dress.
• Pull on your pinny.
• Slide into Stella Mcartney sneakers
• Pour a champers. Guzzle.
• Preheat oven to 220C.
• Combine cauliflower, garlic, half the lemon rind or preserved lemon and 1 tabsp oil in a bowl, season to taste.
• Spread on a large oven tray and roast until golden as Donatella and as tender as George Clooney will be on a cold winter’s night in Como (15-20 minutes LOL).
• Ask George to please chop up all the other ingredients that need chopping.
• Keep oven going because you are going to bake the chickpeas.
• Pat chickpeas dry with absorbent paper. You can’t have them too moisturised.
• Then mix chickpeas with remaining lemon rind and 1 tabsp oil in a bowl, season to taste.
• Spread the chickpeas on an oven tray and roast until golden as Beyonce in concert. (15-20 minutes !).
• Now toss quinoa and 375ml salted water in a saucepan, simmer over medium heat until water is absorbed (12-15 minutes). Like Liposuction.
• Then drain quinoa through a fine sieve to remove excess liquid and spread on a tray to cool slightly.
• Pour another champagne and inhale.
• Combine parsley, mint, spring onion, sherry vinegar, lemon juice and remaining oil in a large bowl.
• Throw in all the goodness you have been baking: the cauliflower, chickpeas and quinoa,
• Season to taste with sel et poivre and toss to combine.
• Accessorize with the chic white dollops of feta and serve warm.
