Straya Day Pavlova !

It’s an Aussie Pavlova!
This fun idea is adulterated from Aldi.
It looks very simple.
All you do is trace a map of Straya on baking paper.
Then spread the Pavlova mix just inside the edge of the map to follow the shape
( the mix should be stiff enough so you manipulate it into the shape) .

You need for one big Pavlova.
4 egg whites, room temperature
1 cup Caster sugar
1 tsp white vinegar
2 tsp cornflour
300ml thickened cream
Fresh fruit, washed and sliced (strawberries, blueberries, raspberries, blackberries & peaches)
Baking paper

•    Slip into Bassike summer maxi dress.
•    Pull on your white birks
•    Pour a glass of champagne
•    In a small electric mixer bowl, beat egg whites on medium until soft peaks form.
•    Add vinegar, cornflour and gently sprinkle sugar, one teaspoon at a time, beating until stiff, thick and glossy (approx. 10 mins). Think glossy as Valentino patent heels
•    Trace map of Australia onto baking paper .
•    Place the baking paper onto a baking tray and spoon meringue mix inside the map.
•    Smooth sides and top of meringue with a spatula, leaving the centre slightly hollowed. As your stomach won’t be after eating this.
•    Bake in over at 130°C for 1 ½ hours, or until Pavlova is dry to the touch.
•    Turn off oven and leave Pavlova to cool with oven door ajar.
•    Once cooled, place Pavlova on a serving plate.
•    Whip cream until thick and stiff and not going anywhere.
•    Gently spread the lovely whipped cream on top of the meringue/ pavlova.
•    Accessorize with lashings of delicious fresh fruit.
•    Serve straight away. It’s a beauty !
